Marshmallow, First Sign of Spring

Marshmallow, chocolate covered marshmallow, is supposed to be like a fine spray of chocolate atomized into your mouth. The secret ingredient of this foamy confection, which I will tell you now, is air. It is supposed to disperse the thin layer of chocolate all through the taste receptors in the mouth to release a full, rich chocolate experience. I have selected a complex, 55% dark chocolate blend as the chocolate of choice. I have shaped the delicately whipped, white foam into chicks and bunnies and eggs. Then I totally enrobe the pieces with a one millimeter layer of chocolate. When eaten, the layer of chocolate snaps, the foam is released, then the flavor is atomized and the experience continues until well after the item is consumed.
